Super Veggie Fritters

SUPER FRITTER RECIPES These fritters have become a regular event around our dinner table. I find them easy, quick, and a nice vegetarian meal. Plus because I make a huge batch, we usually have enough to pop into everyone's lunch boxes for the next day, which is a big help to my mental load! You all need help with the mental load, right?! I have also included a recipe for Lentil Fritters, which is another super healthy version we have enjoyed. Super Veggie Fritters Ingredients 1 onion, grated 1 zucchini, grated 2 carrots, grated 2 potatoes, grated 1/2 cup frozen corn 4 eggs 1/2cup to 3/4 cup flour*   2 cloves garlic, finely grated 1/2 tsp salt optional: 1/2 tsp curry powder    Directions: Mix all ingredients in a large bowl. Heat olive or coconut oil in seasoned or non-stick fry pan. Spoon batter into hot oil and cook like pancakes. Enjoy plain, with butter, or topped with chopped avocado and tomato. Tasty Roast Pumpkin and Chicken Noodles

WHAT'S FOR DINNER? It was one of those days- I felt like something different for dinner. Something besides the usual meals that adorn the family dinner table. I was bored with what we have been eating. I had a pack of lovely chicken legs that needed to be eaten and a butternut pumpkin I had roasted earlier in the day. Although I spent far too many minutes browsing Jamie Oliver recipes, google, and Pinterest, I couldn't find anything that used the ingredients I had. So... as the minutes ticked away and dinner time loomed nearer, I took a deep breathe and determined to make up a recipe. The general inspiration for the recipe came from Jamie Oliver's Chicken Laksa in my 15 minute meal recipe book. And boy was this creative twist of a meal  was a success! Cheery Hot Chocolate

Mumma's hot choccy! CHEERY HOT CHOCOLATE guilt free. refined sugar free. positive side effect: happy mom and koala kiddos....  Sometimes when the volume in the house starts to climb as the kiddos play starts to escalate and the to do list is feeling a little overwhelming, everyone in the house needs a nice warm drink. At least in our home it provides everyone with a bit of calm, some connection time, and something special for my little koalas. Perhaps I'm the one who needs all these things the most. Sipping the warm chocolate infused milk settled me and the smiles from the 3 and 4 year old as they discovered hot chocolate for the first time warmed my tired mummy heart.This recipe got us through dinner making time last night.   Stir it up!  The other great thing about this hot choc recipe is I felt good about all of us drinking it - no guilt about refined sugars, additives or just unnecessary ingredients found in "hot chocolate mixes." Nutrition Packed Carrot Cake Bliss Balls- Gluten Free, Vegan

      NUTRITION PACKED CARROT CAKE BLISS BALLS.. As a mom of a 3 and 4 year old I'm always looking for ways to get extra nutrition and veggies into my kiddos diets.Well, frankly into my diet as well! So I put together this little Carrot Cake Bliss ball recipe that packs in the healthy stuff and includes those raw carrots to give a bit of a veggie bang all while tasting oh soo delicious. My girls are begging me for them...they don't last long around here between the kids and ahmmm the parents. If your kids are more on the picky side you may want to blend up the nuts and pumpkin seeds and perhaps leave out the buckwheat kernels but we like ours nice and chunky. NUTRIENT DENSE The recipe starts out with dates which are a source of energy, sugar, and fiber. They even are a source of minerals such as calcium, iron, phosphorus, sodium, potassium,and magnesium.
