SUPER FRITTER RECIPES

These fritters have become a regular event around our dinner table. I find them easy, quick, and a nice vegetarian meal. Plus because I make a huge batch, we usually have enough to pop into everyone's lunch boxes for the next day, which is a big help to my mental load! You all need help with the mental load, right?! I have also included a recipe for Lentil Fritters, which is another super healthy version we have enjoyed.


Super Veggie Fritters
Ingredients
1 onion, grated
1 zucchini, grated
2 carrots, grated
2 potatoes, grated
1/2 cup frozen corn
4 eggs
1/2cup to 3/4 cup flour* 
2 cloves garlic, finely grated
1/2 tsp salt
optional: 1/2 tsp curry powder 
 
Directions: Mix all ingredients in a large bowl. Heat olive or coconut oil in seasoned or non-stick fry pan. Spoon batter into hot oil and cook like pancakes. Enjoy plain, with butter, or topped with chopped avocado and tomato. Serve with a yummy salad for dinner.
* I use whatever flour I have on hand. Usually buckwheat, rice or a gluten free flour mix. Depending on the absorbency of the flour you use, you will need to adjust the amount of flour so it makes a moist but not watery batter.



Super Lentil Fritters

Ingredients:
2 potatoes, grated
3 eggs
1 1/2 cups cooked split red lentils
1/2 cup frozen corn
1/2 cup rice flour
1/2 tsp curry powder (Keens)

Directions: Mix all ingredients in a large bowl.
Heat olive or coconut oil in seasoned or non-stick fry pan.
Spoon batter into hot oil and cook like pancakes. Add oil as necessary. 

Enjoy plain, with butter, or topped with chopped avocado and tomato.
