Super Veggie Fritters

SUPER FRITTER RECIPES These fritters have become a regular event around our dinner table. I find them easy, quick, and a nice vegetarian meal. Plus because I make a huge batch, we usually have enough to pop into everyone's lunch boxes for the next day, which is a big help to my mental load! You all need help with the mental load, right?! I have also included a recipe for Lentil Fritters, which is another super healthy version we have enjoyed. Super Veggie Fritters Ingredients 1 onion, grated 1 zucchini, grated 2 carrots, grated 2 potatoes, grated 1/2 cup frozen corn 4 eggs 1/2cup to 3/4 cup flour*   2 cloves garlic, finely grated 1/2 tsp salt optional: 1/2 tsp curry powder    Directions: Mix all ingredients in a large bowl. Heat olive or coconut oil in seasoned or non-stick fry pan. Spoon batter into hot oil and cook like pancakes. Enjoy plain, with butter, or topped with chopped avocado and tomato. TRACKING YOUR HOMESCHOOL DAYS... As I get deeper into this adventure of homeschooling my children, one of the dilemmas and challenges I have faced has been around how to record and what to record of what we do everyday. Here in South Australia we do have some government requirements, but I am not required to show what we did every day. However, as an eclectic homeschooler and also a Montessori inspired homeschooler I felt I needed some way to keep track of the work we’ve done- both for me to keep track of where we’re up to and to have a way to prove that I am educating my children if I ever needed to defend myself (unlikely, but I feel more secure this way). Also I felt I needed a place to make observations about my children and notes about learning gaps and needs and interests. But I NEED this all together in one place. SIMPLE HAPPY PARENTING Parenting is one of those things that challenges ; it challenges even the most successful, well educated, and patient among us. When an adult is required to contend with a seemingly irrational miniature human who constantly demands some type of attention, it can leave even the greatest of men overwhelmed and frustrated. Somehow those little bundles of cuteness have the capability of bringing out the very worst monsters inside of even the most cultured grown members of our society. Nevermind the grave responsibility and heavy burden that parents feel weighing on their shoulders. They feel they need to ensure they teach their child everything he or she needs to know, that they provide all the opportunities, all the stuff, all the entertainment, to ensure that these little humans grow into perfect people.  Enter Simple, happy parenting. Cheery Hot Chocolate

Mumma's hot choccy! CHEERY HOT CHOCOLATE guilt free. refined sugar free. positive side effect: happy mom and koala kiddos....  Sometimes when the volume in the house starts to climb as the kiddos play starts to escalate and the to do list is feeling a little overwhelming, everyone in the house needs a nice warm drink. At least in our home it provides everyone with a bit of calm, some connection time, and something special for my little koalas. Perhaps I'm the one who needs all these things the most. Sipping the warm chocolate infused milk settled me and the smiles from the 3 and 4 year old as they discovered hot chocolate for the first time warmed my tired mummy heart.This recipe got us through dinner making time last night.   Stir it up!  The other great thing about this hot choc recipe is I felt good about all of us drinking it - no guilt about refined sugars, additives or just unnecessary ingredients found in "hot chocolate mixes."
